Festive Cranberry Salsa Brie Bake

Festive Cranberry Salsa Brie Bake

½ cup WT Festive Cranberry Salsa
1 wheel brie
Phyllo dough
Slice brie wheel into pie slices. Prepare phyllo
dough according to package instructions. Place
sliced brie wheel on phyllo dough. Add Festive
Cranberry Salsa on top of brie. Close dough all
around brie and salsa. Bake at 350° for 12—15
minutes or until lightly brown. Serve with crackers
or apple wedges.

Onion and Chive Party Mix

3 Tbsp. WT Onion & Chive Blend
6 Tbsp. WT Lemon Grapeseed Oil
4 cups of your favorite party mix (oyster crackers,
cheese crackers, pretzels, or Chex type cereals)
Preheat oven to 250 degrees. Mix Onion &
Chive Blend with Lemon Grapeseed Oil; pour
over party mix, toss well. Spread evenly onto a
cookie sheet and bake for 45 minutes. Cool on
paper towels to remove excess oil. Serve!

Scampi Blend Stuffed Mushrooms

1 Sleeve Butter Crackers, crushed
10 tbsp (1-1/4 sticks) butter, melted
2 tbsp WT Scampi Blend
1/4 teaspoon lemon juice
4 oz any combination of scallops, crab meat, lobster
or shrimp, finely chopped
1-1/4 lbs mushroom caps
Combine the crackers, butter, Scampi Blend, and
lemon juice in a bowl and mix well. Add the seafood
and mix well. Arrange the mushroom caps
on a baking sheet. Spoon the seafood mixture
into the mushroom caps. Bake at 350 degrees
for 7-10 minutes or until heated through and light
brown on top.

Spinach, Artichoke and Alfredo Dip

1 jar WT Spinach Artichoke & Parmesan Spread
1/4 cup WT Alfredo Extraordinaire
1/3 cup milk
1 cup mozzarella cheese, shredded
1/2 cup grated Parmesan cheese
4 ounces (1/2 block) cream cheese, softened and
cubed
Preheat oven to 375°F. In a large bowl combine
all ingredients and mix well, then transfer to a
small greased baking dish. Bake for 20-30 minutes
until bubbly and lightly browned. Serve
warm with your choice of chips, pita, tortilla, bagel,
etc.

Recipe: Jalapeno Cheese Ball

JALAPENO CHEESE BALL

8 oz Cream Cheese (softened)
2 C. Shredded Cheddar Cheese
½ tsp. Lemon Juice
½ tsp WT Szechuan or WT Teriyaki Sauce
½ C. Chopped Pecans
2 tbsp. WT Jalapeno

Hydrate Jalapeno Blend in warm water and set
aside until absorbed. Mix softened cream
cheese with lemon juice; blend well. Add cheddar
cheese & WT Jalapeno Blend; mix well.
Form into ball, wrap in plastic wrap and refrigerate
for at least 1 hour. Roll the cheese ball in
chopped pecans. Serve with Kashi crackers,
Tortilla Chips, Pita Chips or Wheat Thins.
* Thaw to room temperature before serving.

Vocabulary
Expeller Pressed - Expeller pressing is a chemical-free mechanical process that extracts oil from seeds and nuts. This method of oil extraction is an alternative to the hexane-extraction method used for many conventional oils. The temperature reached during pressing depends on the hardness of the nut or seed. The harder the nut or seed, the more pressure
required to extract the oil, which in turn creates more friction and higher heat. There is no external heat applied during the expeller pressing.

n-Hexane is a chemical made from crude oil. Pure n-hexane is a colorless liquid with a slightly
disagreeable odor. It is highly flammable, and its vapors can be explosive. It is used in industry, primarily when it is mixed with similar chemicals to produce solvents. Common names for these solvents are commercial hexane, mixed hexanes, petroleum ether, and petroleum naphtha. The major use for solvents containing n-hexane is to extract vegetable oils from crops such as soybeans, flax, peanuts, grape seed, and safflower seed. They are also used as cleaning agents
in the textile, furniture, shoemaking, and printing industries, particularly rotogravure printing. N-hexane is also an ingredient of special glues that are used in the roofing, shoe, and leather industries. N-hexane is used in binding books, working leather, shaping pills and tablets, canning, manufacturing tires, and making baseballs. Teach your children and teenagers the dangers of inhaling products that contain n-hexane. Keep products containing n-hexane (quick-drying glues and cements) out of the reach of children.

Antioxidants - A group of compounds which combat free radicals (oxygen-species cause of diseases) in your bloodstream.

Saturated and Unsaturated Fats - Fats and oils are basically mixtures of fatty acids and are identified as "saturated" and "mono- or poly- unsaturated" depending upon which type of fatty acid is predominate. Fatty acids are basically chains of carbon that can react with other molecules.
There are two types:
"Saturated"
- Have adequate hydrogen atoms, so they are chemically stable which means they stay fresh longer.
- The chain formation is straight, allowing the chains to pack into a solid form at room temperature (e.g.
Crisco).
- Saturated fatty acids raise cholesterol which raises the risk of coronary heart disease.
"Unsaturated"
- Are missing adequate hydrogen atoms, so they are chemically unstable and go rancid more quickly.
- The chain formation is curved and not able to pack so that at room temperature the fat is liquid oil.

The two types of unsaturated fats are:
Mono-unsaturated - missing 1 hydrogen atom. Liquid at room temperature, but start to solidify or turn cloudy in the refrigerator.

Poly-unsaturated - missing more than 1 hydrogen atom, making it even more unstable than monounsaturated
oils. Liquid at room temperature and remains a liquid when chilled. Goes rancid most quickly.
Unsaturated fatty acids help to lower total blood cholesterol.

Hydrogenation - The addition of hydrogen to fats to change a liquid oil (high in unsaturated fatty acids) to a more solid "saturated" form. This process also keeps the product fresh longer.
The problem: recent studies suggest that hydrogenated fats may raise blood cholesterol.

Trans fatty acids
Products of partial hydrogenation of vegetable oils.
Adverse affects include:
Raises "bad" LDL cholesterol
Lowers "good" HDL cholesterol
Lowers amount of cream(volume) in milk of lactating females, lowering milk quality
Correlates to low birth weight in human infants
Increases risk for diabetes due to effect of increasing blood insulin levels
Lowers testosterone in males and increases level of abnormal sperm

High Density Lipoprotein (HDL) - An anti-oxidant-type "good" cholesterol. For those requiring a cholesterol free diet, HDL is not considered a "cholesterol".

Linoleic Acid - Is one of five essential fatty acids, vital to life and cannot be produced by the body alone. Also known as Omega-6 and in near identical proportions to mother's milk. It is also an antioxidant. Acts as a transporter for saturated fats, preventing accumulation in the arteries.

Flashpoint - the temperature at which an oil begins to smoke and burn - 419 deg F for grapeseed oil and 375 deg F for
olive oil.

Food Additives Could Fuel Hyperactivity in Kids

THURSDAY, Sept. 6 (HealthDay News) -- Some common food colorings and preservatives appear to increase the risk of hyperactive behavior among children, British researchers report.

The link between food additives and hyperactivity has long been suspected, but this is the first study to show a direct connection.

The findings have already caused the British government's Food Standards Agency, which funded the study, to issue a warning to parents about food additives.

"Attention-deficit hyperactivity disorder (ADHD) is an increasingly common problem, and theories abound to account for that," said Dr. David Katz, director of the Prevention Research Center at Yale University School of Medicine. "Among them is the notion that food additives induce hyperactivity."

Despite this apparent connection, Katz cautioned that the increasing number of children with ADHD cannot be blamed on food additives alone.

"No one factor is solely responsible for rising rates of ADHD," Katz said. "Along with the hazards of a highly processed food supply, children are getting less and less physical activity as a means of dissipating their native rambunctiousness."

In the study, Jim Stevenson, a professor of psychology at the University of Southampton, and his colleagues gave drinks containing additives to 297 children. The children were in two groups: 3-year-olds and 8- and 9-year-olds. The drinks contained artificial food coloring and additives such as sodium benzoate, a preservative.

These concoctions were similar to the drinks that are commercially available. The amount of additives were also similar to what is found in one or two servings of candy a day, according to the report.

As a control, some children were given drinks without additives, according to the report in the Sept. 6 issue of The Lancet.

Over the six weeks of the trial, Stevenson's team found that children in both age groups who drank the drinks containing additives displayed significantly more hyperactive behavior. These children also had shorter attention spans. However, which specific additives caused specific behavioral problems is not known, the researchers said.

One of the additives, sodium benzoate, has been linked to cell damage in a previous study, and to an increased for cancer. Sodium benzoate is found in Coca-Cola, Pepsi Max and Diet Pepsi, and in many fruit drinks.

Other additives assessed in the study include a number of colorings -- sunset yellow (E110), found in fruity drinks; carmoisine (E122), a red coloring often added to jams; ponceau 4R (E124), a red food coloring; tartrazine (E102), found in lollipops and carbonated drinks; quinoline yellow (E104), a food coloring; and allura red AC (E129), and orange-red food dye.

"Although the use of artificial coloring in food manufacture might seem to be superfluous, the same cannot be said for sodium benzoate, which has an important preservative function. The implications of these results for the regulation of food additive use could be substantial," the researchers conclude.

Based on these findings, the British government's Food Standards Agency cautioned parents to be on the lookout for hyperactive behavior linked to food additives.

"Parents of children showing signs of hyperactivity are being advised that cutting out certain artificial food colors from their diets might have some beneficial effects on their behavior," the agency said on its Web site.

"However, we need to remember that there are many factors associated with hyperactive behavior in children. These are thought to include genetic factors, being born prematurely, or environment and upbringing," Dr, Andrew Wadge, chief scientist at the Food Standards Agency, said in a statement.

Insights about the causes of ADHD should help parents implement preventive strategies which are urgently needed, Katz noted. "A healthful, unadulterated diet and regular physical activity seem like a good place to start," he added.
